This 1er Cru Chablis from rising star Thomas Pico is one for the books. His fervent commitment to organic farming and natural winemaking is rather rare in this region of France, though we fully support everything he’s doing. This wine is precise, savory, and super food-friendly. Notes of lemon rind, chalky wet rocks, and briny sea salt ooze from the wine’s razor-sharp palate. This is one of our favorite finds this year.
