The 2017 Sparkling Wine is made from hand picked, Old Vine Carignan, using a combination of methods (traditional + ancestral.) Juice ferments naturally in steel, then aged on its lees for six months; mineral-driven, dry, and floral, with notes of red fruit and flowers. 467 cases produced.
