Fruit is organic, hand-harvested, and fermented with indigenous yeasts, showing a distinct final minerality. Fruit for l’Enclos’ comes from a parcel of ungrafted vines, grown in silex soils, showing lifted aromatics smoky undertones, with notes of pear, honeysuckle, oyster shell, and lime.
