Fruit is organic, hand-harvested, and fermented with indigenous yeasts, producing wines with distinct minerality. Fruit for ‘Le Pave’ comes from 26 year old vines, aged in barrique, and bottled unfiltered. Notes of crisp stone fruit, lemon, and flinty shells make for a thirst-quenching, savory white.
