Le Clos du Caillou wines are best known for their intensity, concentration, and undeniable texture. Current winemaker Bruno Gaspard farms all 53 hectares organically and biodynamically, which he believes is the best way to express regional terroir. What makes Le Clos du Caillou’s vineyards unique is that they are completely surrounded by Chateauneuf-du-Pape vineyards, meaning that Le Clos’ Grenache is just as silky, perfumed, and top-quality as the fruit going into neighboring CDP bottlings. Fruit for ‘Cuvée Unique’ is hand-harvested and sorted, fermented with native yeasts in cement, and aged in a combination of large foudre, demi-muid, and barrel for 15-18 months, depending on the vintage. The wine is dark and peppery, noted with flavors of the region’s signature garrigue spice.
