This Sauvignon Blanc/Sauvignon Gris blend comes from an organically-farmed 0.4-hectare plot rooted in clay-limestone marl soils in Chablis. The juice is lees-aged in amphora, old demi-muids, and used barrique. The wine – whose name means ‘without noise’ – is a play on words for the region Saint-Bris (pronounced almost the same). Notes of pithy citrus, menthol, ginger, and freshly cut herbs burst from the wine’s persistent and lasting palate.
