Michael Garofola is originally from Indiana and the Midwest and has been a wine buyer and/or in the restaurant business through all of his adult life in Portland, OR, Santa Fe, NM and even way back in Phoenix, AZ and beyond.  The interest in the vineyard and wine making came to him after years of tasting and focusing on the wines of the world both traditionally made and everything but that. “Heavy Water” is definitely the wine that put Cutter Cascadia on the map with the wine geeks of Portland. Michael is farming nearly 40-year-old Riesling vines planted in the high desert of the Columbia Gorge. It’s an extreme environment, and the wine reflects this. The fruit was destemmed and fermented on the skins until dry, which was around 17 days. Once pressed and racked off the gross lees, the wine remained in barrel for 9.5 months and then bottled unfiltered and unfined.
