Stéphane Moreau’s vision is continued on by his wife Virginie, who produces lifted, Dauvissat-style wines amongst the new generation of Chablis producers. Her 1er Cru ‘Vaillons’ is zesty and refreshing, marked by flavors of tart citrus, flint, and wet stones. This insanely drinkable wine will only get better with time, though we don’t blame you for popping it sooner rather than later.
