Founded in 2011 by John House and Ksenija Kostic, Ovum seeks to highlight the various unique expressions of Riesling across Oregon, seeking out sites with large diurnal temperature swings and well-draining soils. Wines ferment naturally, spend extended time with the lees, and age in neutral oak and/or concrete. ‘Big Salt’ is an aromatic and rich white, noted with flavors of stone fruit, citrus, and sea salt.
