This is one of our favorite bottles from Côte des Bar, because second generation Emmanuel Lassaigne has heart for unfailing purity. Indigenous yeasts, minute amounts of sulfur only if needed, and hand disgorgement are some of his tools of the trade. And that citrus finish on this one... it's one of the aspects that charmed our staff and keeps this one at the top of the list.
