Father-son duo Gary and Nick Farr focus on producing single-site wines from Victoria, spontaneously fermenting all of their wines within their gravity fed winery, usually with significant whole-clusters. Fruit for ‘Three Oaks’ is hand picked and whole bunch pressed, vinified in barrel via natural fermentation and small amounts of lees stirring. The final wine is mineral-driven and bright, noted with flavors of stone fruit, citrus, & wet rocks.
