Thierry Allemand is a local legend in Cornas and is credited with putting the appellation back on the industry’s radar. He farms five hectares of vines organically and focuses on two single-vineyard bottlings, ‘Reynard’ and ‘Chaillots’. ‘Reynard’ is produced from Thierry’s older vines and is whole-cluster fermented, aged for 24 months in oak, and bottled unfined/unfiltered. Compared to ‘Chaillots,’ this wine is darker and more concentrated, yet equally sophisticated. Serve with braised beef or hamburgers on the grill.
