After studying under the great Anselme Selosse in Avize, Ulysse Collin founded his eponymous estate back in 2003 and has since been working towards full biodynamic conversion. This mineral-driven Blanc de Noirs is loaded with flavors of baked apples, brioche, and crushed rocks. Bright acid and solid structure lead to a lasting, spice-driven finish.
