Domaine de l’Ecu is one of the OG organic/biodynamic viticulturalists in the Loire Valley and have farmed their vines in such a way for over forty years. The estate has also pioneered bottling wines by soil types and implements extensive lees aging in the cellar. ‘Classic’ is a crisp and clean varietal Melon de Bourgogne that ferments with native yeasts and is aged in underground steel tanks.
